Kombucha!

So what exactly IS kombucha? It's a fermented beverage that is made from black tea and sugar. It's used as a probiotic source (tummy friendly). It supports a healthy stomach, helps prevent a wide variety of diseases, may improve mental health, protects the lungs, is beneficial to the cardiovascular system, is antibacterial, may help manage diabetes, and helps maintain a healthy liver. It contains a positive colony of bacteria and yeast, that are responsible for starting the fermentation process once combined with sugar.
 
After it's fermented, kombucha becomes carbonated and contains vinegar, B vitamins, enzymes, probiotics, and acetic, gluconic, and lactic acids. These bacteria produce cellulose, which acts as a shield to cells.
 
The sugar and tea solution is fermented by the bacteria and yeast, and is known commonly as a SCOBY (symbiotic colony of bacteria and yeast).
 
Unfortunately, kombucha can get pretty expensive if you drink it on a regular basis. I've been looking into options today to create my own SCOBY at home.
